Japan has a rich tradition of food carving called mukimono. So if you’ve ever eaten at a fancy Japanese restaurant you’ll be sure to have spotted a carrot carved into a flower garnishing your plate. But Japanese artist Gaku has taken this art to a whole new level. You just have to check out his Instagram to see all his amazing work!

According to the blog Spoon & Tamago, Gaku creates these carvings using an X-Acto knife and whatever produce is on hand. What makes his work more incredible is that he has to work incredibly fast to get his piece done the fruit or vegetables oxidize and start going brown. Therefore the pieces you see what sometimes take him just minutes!

Gaku suggests that the banana is a great fruit to practice with because it is cheap and easy to carve. If you are wondering what he does with all his creations after he is done, his reply is simple: he eats them. “Except for the banana peel.”
