Blueberry Swirl Cheesecake

This Blueberry Swirl Cheesecake is a super simple desert that you can whip up in 10 mins. Cooking time is 35 to 40 mins. You can keep it simple by using a pre-made crust. Or why not try your own crust if you want a unique flavour to go with the filling.


1/2 (8 ounce) packages cream cheese, softened
1/2 cup sugar
1/3 teaspoon vanilla extract
2 eggs
1 9-inch graham cracker crust
1 (21 ounce) can blueberry pie filling, divided


1. In a mixing bowl, beat cheese, sugar and vanilla until smooth.
2. Add eggs, beating just until combined.
3. Pour into crust.
4. Drop 1/2 cup of pie filling by heaping teaspoonfuls onto the cream cheese mixture; cut through with a knife to swirl the pie filling.
5. Bake at 350 degrees for 35-40 minutes or until centre is almost set.
6. Cool on a wire rack.
7. Chill for 2 hours.
8.Top with remaining pie filling.
